I believe they do rolling admissions in the sense that they review applications as they come, but those applications are put into one of of the interview days they do in October, November and January. I’m assuming they try to accept a certain number of students from each interview day but I don’t think it’s a definite number. I think how it works is that after each interview they review all applications again to compare scores. Then those with the highest 36 scores are granted admission (working their way down the waitlist until there are 36 confirmed students).
