Can I have the PA I work with sign off on shadowing hours?

Hi everyone!

I have been working as a medical assistant in the practice that I work in for 2 years. In this role, I am responsible for taking on both MA duties (vitals, labs, etc.) as well as receptionist and scribe. As a scribe, we follow the providers into the rooms and document all information. The providers will also allow us to examine patients (minimally). 

This PA I work with, the only PA in the practice, is also writing me a letter of recommendation. Would it be okay for him to write me a letter and to sign off on shadowing hours? Technically I do shadow him when I work with him.
