Looking for a PA to shadow in southern Louisiana

I am a Biology graduate from the University of Louisiana-Lafayette and I am currently applying to PA schools. However, I am unable to apply to either LSU-NOLA or Our Lady of the Lake, as they both require a LOR from a PA. I shadowed one PA in Lafayette, but it was only for a couple days, and she doesn't know me well enough to write a letter. Therefore, I would like to set up a long term shadowing that would allow me to obtain the necessary experience and rapport. Thank you in advance for any responses.
