Shadowing as a CERTIFIED PA Already

I am still looking for my first job as a certified Physician Assistant, but since I do not want to lose medical knowledge while I am applying, is it ok if I shadow? I don't have liability insurance nor do I plan on submitting a form to the state board listing a supervising physician since it is not employment and is only shadowing. Is this fine?

What would the scope of the shadowing experience look like? May I take a history from patients and discuss the assessment and plan with the doctor without examining patients? How would I list this shadowing experience on my resume?
