When I started my job as a medical assistant, part of the initial involved me shadowing for a few weeks. Can I list these hours under shadowing? Some people say to not double dip, but I feel that this should count as shadowing hours

^Doesn't matter, you can list shadowing anyone (I shadowed a flight medic and an NP in addition to PAs and MDs). @OP, the double dip just means you can only count those hours once. It sounds like you should list them under shadowing and then subtract those hours from your total MA hours. Make sense?

I'd list them as part of your HCE/PCE.  It may have been 'shadowing' but it was part of your job training.  

As above - whatever you decide to list them as - make sure those hours only count once (i.e as shadowing OR job hours, not both).
